What exhausts are people putting on the 2021 euro 5 model.

I really want the SC Project Conic 70’s but I’m not sure if it’ll fit and SC Project can’t confirm that there current euro 4 will fit!

Looks good, I’ve ordered the euro 4 SC Project Conic. Found quite a few videos of these installed on the euro 5 bike, I’ll keep the original for any MOT tests etc.

You won't need to change it for the UK MOT test - emissions on bikes are purely a visual check, unlike cars. I would carefully check whether the ECU needs a re-flash, though, as it will be set up for Euro 5 running.
